Hijiki with Tofu and Beans

Side dish made with dried seaweed.

Ingredients

  • Dried hijiki
  • Can of white beans
  • Half a box of tofu
  • 1 carrot
  • Fish cake
  • Deep fried tofu skin
  • Water, 200ml
  • Concentrated mentsuyu, 2 tbsp
  • Sugar, 1 tsp

Directions

  1. Soak the dried hijiki in water and drain the water
  2. Cut the tofu in 2cm bits
  3. Slice the tofu skin and fish cake
  4. Julienne the carrot
  5. Pan-fry the carrot and fish cake with a pinch of salt
  6. Add beans (I used less than a can), hijiki, tofu, tofu skin, and the liquids
  7. Turn heat high until the liquid boils
  8. Turn heat to medium and cook for 15 minutes
  9. Serve warm or cold
