Mapo Eggplant

Instead of mapo tofu, it's mapo nasu.

Ingredients

  • Ground pork
  • Eggplant, 1
  • Green onion
  • Sake, 3 tbsp
  • Mirin, 1 tbsp
  • Sugar, 1/2 tsp
  • Salt, 1/2 tsp
  • Soy sauce, 2 tbsp
  • Katsuobushi

Directions

  1. Cut green onions, separate into white and green parts
  2. Cut eggplant into bite-sized pieces
  3. In a bowl, mix sake, mirin, sugar, salt, soy sauce, katsuobushi
  4. Pan fry eggplant until golden, set aside
  5. Cook white parts of green onion
  6. Cook ground pork
  7. Add in the premixed sauce
  8. Add in eggplant
  9. Top with green onions
